And this time, vegetarians can rejoice as Khattar’s latest book — Vegetarian Fare — has a delectable variety of easy to cook recipes. The best part is that they are easy to cook.<br /><br />Though you would be familiar with some of the recipes, you will still love Khattar’s version of it. However, some of them also call for a bit of serious cooking, like the Dal Dips in Sweet-Sour Gravy, Subzi Dilruba, Dal Hariyala, Khatti Meehi Moong Dal, Creamy Palak Mushroom and Subz - e – Kaju Makhana. While these recipes sound serious, the author explains the methods and ingredients in a simple yet explicit way. A conversion table accompanies the book, making it easy for the readers to follow the recipes. <br /><br />The first part of the book offers Indian beverages with a delicious twist — be it the ‘Nimbola’ (lemonade) or the Tri-colour Shake which is healthy mix of Pineapples, Oranges and Apples. Move on to the Soups — Indian style! There’s the Milla Julla soup, Khatta Meetha shorba, Soup Hriyala and more.<br /><br />Then comes recipes for snacks. Though they are pretty much the regular snacks, the Bhalla Cones and Dal Triangles are exciting. Interestingly, the book has separate section on Cereals, Dals and Vegetables. This makes interesting reading as one discovers the wide variety of things that can be cooked up with simple ingredients. You always thought the Rice to be a boring cereal, right? Not if you try the Rice Parantha or the Cholia Pulao. In the dals, try the Raseele Urad and Besan Bhaji. In the vegetable, treat yourself to Creamy Baby Corns, Gajjar Methi Ki Bhujia and Salsa Mushroom. <br /><br />The accompaniments too offer a delicious variety including, Nariyal Ki Chutney, Sweet Corn Salad, and Cashew Raita. She’s saved the best for the last — the Sweets, of course! Don’t miss out the Minty Chocolate Float, Jalebi Sundae and the Cheese and Coconut Rolls. <br /><br />Khattar’s creativity adds a twist to the most regular of recipes. She also seems very particular about the health quotient in her recipes.
