This salad is for those who love the charred texture and flavour and to make it, first your need to heat the grill to 250°C. Slice watermelon and cheese of your choice and arrange them in a baking tray. In a bowl, combine 3 tbsp lemon juice, 2 tbsp olive oil, 1 tbsp chopped ginger and 1/2 tsp salt. Pour this mixture over the cheese and watermelon slices in the baking tray. Turn each piece to coat properly. Chill it for 30 minutes and then grill for 2 to 4 minutes or until each side is golden brown.
