You might have tried all kinds of fritters but have you ever tried vegetable peel fritters? Well, just use the leftover ridged gourd or tori peels and use them to make crispy pakoras. Prepare a thick pakora batter with besan and spices, dip bottle gourd peels in it and deep fry them. Once done, serve with ketchup and mint chutney.

Orange Peels

Use leftover orange peels to make sweet orange candy. Add orange peels in a sauce, add 2 cups of water and let it boil. Once boiled, strain the water and keep the orange peels aside. Now, take a separate pan, add 2 cups of water and 1 cup sugar. Mix it well and the sugar dissolves. Once the mixture turns a bit sticky, add orange peels and coat them well in sugar mixture. Let the peels cook for at least 20 minutes, until they become translucent. If any extra sugar syrup is left, drain it and let the orange candied peels dry.

With leftover carrot peels you can easily make delicious pesto sauce in a jiffy. For this you need- 2 cup carrot peels, ¼ cup toasted walnuts, ¼ cup Parmesan cheese, 2 garlic cloves, ¼ tsp salt and ¼ tsp black pepper.
