Protein-rich Egg Poha Recipe

This breakfast dish is a seamless blend of the goodness of eggs and comfort of poha that many of us grown up eating. It makes for a protein-packed breakfast dish, where the spices blend with eggs and then gently combine with soft and seasoned poha and make for a filling breakfast delight. Ingredients


1.5 cups flattened rice, salt to taste, 1/2 tsp turmeric powder, 1/2 tsp sugar, 1 tsp lemon juice, 2 eggs, 1 tbsp ghee, 1/2 tsp mustard seeds, 1 tsp cumin seeds, 1 onion, 8-10 curry leaves, 2 green chilies, 1 tomato, salt to taste, 1/4 tsp turmeric powder, 1/4 tsp garam masala, a few drops of water, 2 tbsp roasted peanuts, and 1 tbsp coriander leaves

Step 1


To begin with, soak the poha, drain and let it rest.

Step 2


Add turmeric, sugar, salt and lemon juice to it. Toss well and let it rest.

Heat ghee in a pan and add curry leaves, cumin, mustard seeds, and let them crackle.

To this, add chopped onion, tomato and the spices. Mix well until the rawness of veggies disappear.

To this, add two beaten eggs and cook for just 1–2 minutes. Keep the eggs soft and do not overcook them.

Now, add the seasoned poha and mix everything together gently. Add a splash of water, cover, and switch off the flame.

Finish with crushed roasted peanuts and fresh coriander and mix well. Serve hot!
