Benefits of Jau (Barley)


Jau, or barley, is a cereal grain that has been a part of the Indian diet for centuries. It is known for its earthy flavor and rich nutritional values, as it is rich in dietary fiber, especially beta-glucan, which is good for the heart, digestion, and blood sugar as well. It is also a rich source of protein, iron, magnesium, and antioxidants. In India, it is mostly consumed in the form of flour for making roti or khichdi or as a concoction. As per a study, it is rich in soluble fiber that helps reduce blood cholesterol and lower blood sugar levels too.

How to make Jau ki Roti


In a mixing bowl, add 1 cup barley flour, and a pinch of salt. Add hot water and start mixing to knead the dough. Once done, let the dough rest for 10 minutes. Roll out rotis and cook on a tawa and serve it hot with a dollop of ghee and some jaggery on top.

Benefits of the combination

According to Ayurveda, ghee is known to stimulate the digestive fire making it easier to digest heavy grains like wheat and barley. Also, it is said that ghee works as a lubricant for the intestines. It is also said that ghee helps with absorption of nutrients from food. According to a study, ghee is found to support calcium absorption, due to its vitamin K content, which plays a key role in boosting bone health. According to Ayurveda, ghee adds warmth and helps pacify vata. And lastly, gur calms the pita and vata, and makes the trio an ideal meal.

According to Ayurveda, ghee helps with the better digestion of barley and it also helps pacify vata. According to a study, ghee contains conjugated linoleic acid (CLA) and butyrate, both of which exhibit anti-inflammatory properties. Also, the fatty acid profile of ghee helps improve absorption of fat-soluble vitamins (A, D, E, K).

Role of Gur

Gur also known as jaggery, works as a blood purifier, and cleanses the respiratory tract. It is also said to support the liver and reduce the buildup of toxins. According to a study, it helps clean the lungs and respiratory tract, which further reduces irritation and cough and boosts lung functioning.
