
Come winter and travelling by train sounds even more exciting. Wondering why? Well, the bowl of comfort served in the form of Cream of Tomato Soup with fried croutons is so delicious and comforting that one often ends up asking for another serving. If you also do, then why don't you try the Indian Railway–style Cream of Tomato Soup at home? Here's the simplest and quickest recipe to follow.

5–6 ripe red tomatoes, 1 tbsp butter, 1 tsp oil, 1 tbsp all-purpose flour, 2 cups water, ½ cup milk, 1 tsp sugar, salt to taste, ¼ tsp black pepper powder, 1 bay leaf, 1 clove, 1 tsp cream, and bread croutons

First of all, add chopped tomatoes, bay leaf, clove, and water in a pan and boil for 8–10 minutes until tomatoes turn soft.

Let them cool down and then blend to a smooth purée, and strain to remove seeds and skin.

In another pan, heat butter and oil in a pan. Add flour and sauté on low flame until fragrant.

Add the tomato purée to it and stir continuously to avoid lumps. Add salt, sugar, and pepper.

Now, add in milk, mix well, and simmer for 5–7 minutes on low heat until slightly creamy.

Add a little hot water if required and your thin, smooth, and mildly sweet soup is ready.

Serve hot with a topping of cream and bread croutons. Enjoy!
