While you’re browsing through the umpteen food stalls at Borough Market, just put on your blinders and bypass the multitude for the most sinful version of grilled cheese served at Kappacasein's. Before you roll your eyes—it’s just a humble cheese sandwich at the end of the day—Kappacasein's uses five different cheeses (Bermondsey’s hardpressed, frier and red, spalactic and ricotta), all of which are made in-house at their dairy. Pick the one you want, and it is then put between two slices of toasted Poilâne sourdough, with a sprinkle of leek and onion to create a slight distraction (but not too much) from all the cheesy goodness. The other thing you should try here is the raclette, which is essentially baked potatoes topped with melted cheese, salt and pepper, and served with a side of sweet gherkin pickles. Once you've been initiated, you'll keep coming back for more.
