The Interval

What kind of bar has a soundtrack specially created by Brian Eno? The Interval is that bar at the Long Now Foundation (where Eno is a board member), an organisation that aims to promote long-term thinking, 10,000 years into the future and beyond.

There was plenty of buzz around the Interval when it opened in 2015. The Interval is a mixture of bar, cafe and museum, and has been described as “stepping into an eccentric genius’ well appointed library.” There are thousands of books adorning the walls, and strange mechanical wonders all over the place (including a clock engineered to last for 10,000 years).

The cocktail menu by award winning bartender Jennifer Colliau is itself inspired by time. The cocktail menu is big, with 9 different sections with 5 cocktails in each. You can try some of the earlier cocktails ever made from around the world.
Drink to try: Mezcal, Bodega Style, $10 (Xicaru mezcal served neat with oranges and spicy sour tamarind salt on the side).
