The city's artisanal past (and present) is celebrated at this welcoming locals bar, which is housed in a former wood workshop on the quiet side of Piazza Santo Spirito. Wood-working machinery and old industrial photographs dot the interior, and antique Florentine furniture gives the place extra charm.
Florence's residents tend to steer clear of bars in the most touristy areas of town, but they seem to make an exception for Volume, which is usually packed with elegant, artistic Italians. Perhaps the locals are drawn by the bar staff (always friendly), regular live music (Sat-Sun evenings, and weekdays in summer), and unusually generous aperitivo, which is served from 6pm and comes free with drinks.
