I only like ghar ki chai; I am a desi chai person, not a fancy- flavoured tea person. I need tea to start my day, and I need Kumar Anna’s handmade adrak (ginger) chai, with less sugar and little milk. My mom makes a homemade mix of two different kinds of tea, and we add adrak to it. I also have this tea mix that is good for bloating, and has antioxidants.– Ragini Dwivedi

How most Indians make Tea- lots of ginger, Tulsi and cardamom and keep boiling it for ages and then add lots of milk and again boil it. So basically it doesn't remain a brew but becomes a STEW. Yes, Indians don't brew their tea; Indians stew their teak killing the flavourful aroma and the taste of the tea. What was supposed to be a light invigorating brewed drink has in India become an energy stew akin to Arak or Toddy to shake you out of your sleepy stupor in the morning. Most Indians have no idea of the difference between First Flush and Second Flush and are congenially deprived of the flavours of different varieties of tea. But because of their numbers and new found economic power more than ever are traveling abroad and making this concoction of masala stew popular abroad. Actually Indians are celebrating the demise of pure unadulterated flavourful and mildly refreshing tea, but then Who am I to complain as long as they are buying my tea dust by the kilos.
