What makes these Indian dishes so special

Indian food is known for its vibrant colors and intense flavors. From the richness of dal makhani to fragrant biryani, Indian food offers an array of delicacies that are celebrated around the world. Recognizing the same, Taste Atlas recently released the list of "100 Best Dishes in the World" and has included 4 iconic dishes in it. Scroll down to read about them.

Murgh Makhani


This chicken dish is at 29th position. Also known as Butter Chicken, the dish originated in Delhi during the 1950s, when a man named Kundan Lal Gujral opened his restaurant called Moti Mahal, the Taste Atlas website reads. The restaurant's cooks combined leftover marinade juices with tomatoes and butter, and then stewed the tandoor-cooked chicken in it, without even knowing that they had accidentally stumbled upon one of the most loved dishes ever and a future international delicacy.

Hyderabadi Biryani


This iconic rice preparation is at 31st position and is a South Indian dish consisting of basmati rice, goat, mutton, or chicken meat, lemon, yogurt, onions, and saffron. There are two main varieties of the dish – kachchi (raw) and pakki (cooked). It is said that Hyderabadi biryani's richness of flavor is due to the unique process of cooking raw rice and raw meat together with exotic spices, unlike other places where meat and rice are cooked separately. According to the website, the special cooking style, known as dum, is believed to have come from Persia during the Mughals' regime in India.

Chicken 65


This chicken preparation is at 97th position and is native to Chennai. It consists of deep-fried chicken that is marinated in ginger, lemon, red chilles, and a variety of other spices. According to the website, there are a few theories about the origin of chicken 65. The most popular theory says that it was created in Tamil Nadu by A. M. Buhari in 1965. Another one says that the original dish was made with 65 hot chili peppers, as a testament of manliness. There are also some unlikely theories, such as the one claiming that the chicken was cut into 65 pieces, or that the chicken was 65 days old when the dish was prepared.

Keema

This popular Indian dish is ranked 100th and is a stew usually cooked as a curry using minced lamb or chicken, green peas, ginger-garlic paste, chili, onions, ghee, and garam masala. The name of the dish means minced meat in Urdu. Keema is often served with pav buns, naan, or other flatbreads. It is also used as stuffing in samosas and parathas.
