Not every Indian dish needs to be hot to taste good. In fact, some of our everyday favourites become healthier when eaten cold. Cooling changes the way certain foods work in your body. It helps create resistant starch which is good for digestion and can support better blood sugar control. You may have already eaten some of these straight from the fridge without realising they are actually doing your gut a favour. Here are six Indian foods that get even better for you when served cold.

Curd rice

This southern favourite is naturally cooling and gentle on the stomach. But when eaten cold, it also delivers a solid dose of probiotics and resistant starch, making it soothing and gut-friendly all at once. Add a few curry leaves and mustard seeds for extra flavour and digestion support.

Idli

Leftover idlis from breakfast become slightly firmer when cold but they gain resistant starch in the process. Pop them into a tiffin or enjoy them with podi or curd. They are easier on your system and keep you full longer.

Potato sabzi

Cold potatoes might sound strange but hear this. Once cooled, they carry more resistant starch than when hot. This helps manage blood sugar levels and supports good gut bacteria. A cold aloo chaat with lemon and jeera powder is both tasty and smart.

Once cooled, poha firms up and becomes lighter to digest. It also retains iron and fibre better and pairs well with a bit of curd or even green chutney. Cold poha with peanuts and lemon has a punchy, refreshing feel without weighing you down.
