Healthy and interesting lauki dishes
Bottle gourd or lauki and kids have love and hate relationships. And it mostly happens because the vegetable looks boring and offers no taste. But, how about turning it into a treat full of flavorus for tiffin? This low calorie vegetable, which is a rich source of vitamin C, vitamin B, vitamin K, calcium, iron, zinc, and magnesium can actually be made into a treat. Lauki ke Appe
Mix sooji, curd, and grated lauki, season it with a tempering of oil, mustard seeds, and curry leaves. Add baking soda and salt. Pour the batter in appe mould and cook using peanut oil. Once done, pack it with coconut chutney. Enjoy!
Lauki Kofta
This goes well with paratha or rice and is a curry preparation made with grated lauki shaped into kofta balls along with besan and spices, which are deep-fried and then dunked in tomato-onion gravy.
Lauki Raita
It's a condiment made with grated lauki sauteed in ghee along with cumin seeds and green chilli and further mixed in curd, seasoned with roasted cumin powder, salt, sugar, and pepper.
Lauki Halwa
As the name suggests, it's a dessert made with grated lauki cooked in ghee along with mawa, sugar, milk, and roasted nuts.

Lauki paratha is a healthy breakfast or tiffin option, made with grated lauki seasoned with salt, pepper, chilli, and lemon juice, which can be either stuffed in dough or mixed with dough.

It's a deep-fried evening snack option that is made with grated lauki, mixed with besan, salt, pepper, green chilli, turmeric powder, and coriander leaves.
Lauki Soup
It is a healthy soup made with lauki puree cooked in ghee or oil along with salt, pepper, and paprika powder. It can be easily packed in a flask and makes for a satiating tiffin meal for kids.
Lauki ke kebab
Simply grate the lauki, squeeze out the water and season it with rice flour, chilli, pepper, salt, and raw mango powder. Shape into kebabs, roll into breadcrumbs and then cook on a greased tawa using oil or ghee. Serve hot with chutney.
