Innovative ways to enjoy beetroot

Beetroot is a powerhouse of nutrition. It is said that beetroot is rich in beta-carotene, iron, calcium, magnesium, betalains, vitamin C, sodium, and more. Those with a deep red hue are especially popular for human consumption, whether enjoyed raw in salads, juiced, or cooked. It is also considered as a functional food that is loaded with benefits. The study says that beetroot’s betalains are potent antioxidants that scavenge free radicals, reduce oxidative and nitrative stress, and prevent DNA damage. They also help contribute to reducing the risk of chronic diseases such as cardiovascular and cerebrovascular diseases, and diabetes. Paneer Beetroot Paratha

This fiber and protein-rich dish makes for a perfect breakfast and even school or office tiffin. To make this, simply sieve wheat flour and knead a dough using 1/4 cup beetroot puree and 1/4 cup grated paneer along with green chilli, coriander leaves, salt and pepper. Roll out parathas and cook it on a preheated tawa using enough oil or ghee.

Beetroot Cheela

This also makes for a filling breakfast and to make this, grate 1 beetroot and mix it with 1 cup besan, and season it with salt, pepper, ajwain, onions, lemon juice, green chilli, and coriander leaves. Use water to make a batter of pouring consistency. Heat a non-stick tawa and use a ladleful of the batter to make cheela. Use enough oil or ghee to cook it and serve hot with chutney.

Beetroot and Poha Appe


These are bite-size snacks that can be easily made at home. Grate 1 beetroot, add 1/cup cup soaked poha to it and mash them well. Next, add 1/2 cup sooji, along with 1/2 cup curd, salt, pepper, and green chilli. At last, add 1/2 tsp baking soda and then pour the mixture into a preheated appe pan. Cover and cook for 10 minutes or until done well. Serve with coconut chutney and enjoy.

Beetroot Raita


To make this side dish, grate 1 beetroot and saute it in 1 tbsp oil along with 1 tsp cumin, 1 tsp mustard seeds, and 4-7 curry leaves. Add it to the beaten curd, top it with salt, pepper and a pinch of caster sugar. Mix well and enjoy with paratha.

Beetroot and Sprouts Cutlet

To make this snack, grate 1 beetroot, and mix 1/2 cup powdered soy beans, 1 onion, 1 green chilli, 2 tbsp coriander leaves, 1 boiled potato, salt, pepper, and chaat masala. Mix well and shape them into tikki. Shallow fry, pan fry, or air fry and enjoy them with chutney or ketchup of your choice.

Beetroot Mousse

To make this healthy dessert, boil and puree 1 beetroot and whip 1/2 cup fresh cream. Mix them together and add 2-3 tbsps honey or maple syrup. Spoon into serving glasses and chill for 2–3 hours until set. Enjoy!

Beetroot and Spinach Smoothie


This one makes for a healthy morning drink and to make it take 1 beetroot, 1 cup spinach leaves, 1 banana, 1/2 cup yogurt, 1 cup coconut water, 1 tsp lemon juice, and 1 tbsp honey. Blend them well until smooth. Serve fresh with a topping of chia seeds or flax seeds.
