2 eggs, 1 tsp oil, 2 tbsp chopped onion, 2 tbsp chopped tomato, 1 tbsp chopped capsicum, 1 green chilli, salt to taste, black pepper to taste, and 1 tbsp chopped coriander

To begin with, crack eggs into a bowl.

Add salt and pepper and beat well for 30–40 seconds until slightly frothy.

Chop onion, tomato, capsicum and coriander and add them to the egg mixture.

Heat a non-stick pan and spread the oil.

Pour the egg mixture and let it set on low flame and cook until evenly done.

Once done, transfer to a plate and serve with toast on the side.
