Shardiya Navratri has started and it’s time to immerse the soul in devotion and leave no stone unturned to seek the blessings of Goddess Durga. But amidst all this one thing that can haunt you constantly is ‘what to cook’? With so many restrictions, cooking a meal during this time can be a challenge. Well, if you too are observing Navratri fasts and confused about ‘what to eat’ or ‘what to cook’? Then we have got your back, read on to find out some simple recipe suggestions to make your festive feasting more interesting and effortless.

​Vrat wala salad


To begin with this simple recipe, take a bowl and add 1 cup hung curd, 1 cup low fat cream and using a whisker beat the mixture with ¼ cup powdered sugar/honey as per taste. Then add in chopped mixed fruits, pomegranate seeds and enjoy it chilled.

​Vrat Shahi Paneer


To make this dish, take a pan and add ghee roast 1 cup cashews. Next to a pan, add 2 cups of chopped tomatoes, green chilies, and cumin seeds. Cook the masala and add the cashews, turn off the heat and add them to the blender to make a thick blend. Cook this blend and add fresh cream along with paneer cubes, season the dish with salt and pepper and enjoy with samvat rice pulao.

​Basundi


Made with full cream milk and nuts, this is a perfect sweet treat to enjoy without grains. To make this boil, milk in a pan and keep stirring. In the meantime, roast mixed nuts and dry fruits, keep aside. Once the milk turns thick, add sugar after lowering the heat. Add ½ tsp cardamom powder and crushed nuts and dry fruits. Cook for sometime till it turns thick and creamy. Enjoy.

​Aloo Paneer fry


This is another simple snack or meal recipe, which can be made in just a few minutes and relished anytime. Boil the 2 potatoes and peel it well. Next, take a pan and add ghee, add cumin seeds, green chilies and cut the potatoes and fry them. Add diced paneer cubes, add fresh coriander leaves, ginger paste, black pepper and sendha namak to enjoy.

​Sago Pancake


This simple recipe is made with a modern twist, soak 1 cup sago for 3-4 hours and make a batter with ½ cup hung curd, green chilies, coriander and allow it to ferment for an hour. Add sendha namak and whisk the batter. Heat a pan and add ghee, pour a ladle, prepare the pancake and enjoy with Vrat wale aloo.
