When the nation is painted in the shades of tricolour, why keep the plate different? This Republic Day, indulge in the colors of patriotism and use ingredients like carrot and spinach, to recreate your staples into tricolour and surprise your loved ones at home. Tricolour Idli



This is one of the most famous tricolour dishes and to make it, make idli batter with soaked rice and lentil, divide them into three, add carrot puree to one, spinach puree to other and keep the third white. Layer them in the mould and then steam to perfection. Enjoy with sambar and coconut chutney.

Tiranga Pulao


For this rice delight, combine carrot rice, coconut rice, and spinach rice, layer them in the right sequence, top with a roasted star anise and enjoy with curd and pickle on the side.

Paneer Tiranga Tikka


Cut paneer cubes and make three marinates, one with curd and pepper, other with tomato and chilli, and the third one with coriander leaves and garlic. Coat them well, and char them to perfection. Enjoy in three ways—chilli–tomato, malai, and hariyali—then grilled to perfection.

Tricolour Dhokla


To make this steamed delight, divide dhokla batter made with sooji into three, add carrot puree to one and spinach to other, layer them and then steam and serve hot with a tempering of mustard seeds, curry leaves, and green chilli. Enjoy!

Tiranga Paratha Roll



While making the dough, divide flour in three parts and knead two of them with carrot and spinach puree and one with water. Layer three dough balls, roll out paratha and cook on tawa. Fill the parathas with veggies and sauces of your choice. Enjoy.

Tricolour Kheer


For this sweet delight, prepare classic one with rice, milk, sugar, and nuts and then divide them into three, flavour one with saffron and one with pistachio or cardamom. Layer them in the tricolour sequence in ramekins, chill, and enjoy.

Tiranga Chaat


To make this chaat, make carrot and spinach pakodas and layer them on a plate with curd at the centre and top it with boiled potatoes or paneer, red chutney, green chutney, sev, pomegranate seeds and lemon juice.
