Right way to make Kaache Aam ki Launji

Kaache Aam ki Launji, also known as Khatta Meetha, or Khat-Meetha is a summer condiment enjoyed in many parts of India. It is a sweet, sour, and salty treat with thick consistency and is made with raw mangoes jaggery, and spices. This simple and easy condiment goes well with stuffed paratha, poori, and even dal-chawal. Give it a try!

Ingredients


2 raw mangoes, 2 tbsp oil, 1/2 tsp mustard seeds, 1/2 tsp fennel seeds, 1/4 tsp nigella seeds, 1/2 tsp turmeric powder, 2 dry red chilies, 1 tsp red chili powder, 1/2 cup jaggery, salt to taste, and 1–1.5 cups water

Step 1

To begin with, peel and dice raw mangoes into small cubes. Wash them and pat dry.

Heat mustard oil in a pan and add mustard seeds and let them splutter. Also, add fennel seeds, red chilies, and kalonji for aroma and flavour.

Next, add chopped raw mango pieces and sauté for 2–3 minutes.

Add turmeric, red chili powder, black pepper, and salt. Mix well, add add jaggery and water. Cover and cook for 10-15 minutes.

Open and check the texture and consistency. Adjust the flavours as required and cook for 5 minutes more.

Once ready, let it cool down and store in a dry and clean air-tight container. Enjoy with paratha or poori, or even dal-chawal.
