Those who love cooking will totally agree with the fact that we often compare the home-cooked dish to the one served in restaurants as the real parameter of perfection. And when it comes to pizza and pasta it becomes inevitable. The good news for all the home cooks is that, the secret of perfectly baked pizza has been finally divulged. A recent study by an anthropologist and a physicist has made this happen. Rome-based Andrey Varlamov and Andreas Glatz of Northern Illinois University have found the secret behind the perfectly baked pizza and it is simply interesting and easy to implement. What is the secret behind a perfectly baked pizza?

All this while we had been thinking about the magic of mozzarella, water, seasoning and what not. But the secret to a perfectly baked pizza lies in ‘thermodynamics’. According to a study, the restaurant/cafes heat up the traditional wood-fired oven at 625 degrees Fahrenheit (329 degrees Celsius) which radiates heat evenly in all directions, baking the pizza uniformly. Technically, the pizza has to be cooked a little more than the prescribed time.

How to do it at home?

According to experts, you can do the same in your regular electric oven. All you need to do is to change the cooking equation. First of all, bake the base at 450 degrees Fahrenheit (230 degrees Celsius) and make sure you bake the pizza for slightly longer (4-5minutes) than the prescribed duration. If you are wondering why, the answer lies in your love for toppings. Veggie toppings contain a lot of water, which cools down the oven through evaporation. So, if you are planning to have lots of peppers and onions, you'll probably have to cook your base a little longer.
