When rice is cooked and then cooled, some of its starch transforms into resistant starch through a process called starch retrogradation. This type of starch is resistant to digestion, which slows the release of glucose into the bloodstream. As a result, eating cold or reheated rice can lead to lower post-meal blood sugar spikes compared to freshly cooked rice. In fact, a study with 15 healthy adults found that consuming white rice that had been cooked, refrigerated for 24 hours at 4°C, and then reheated significantly reduced blood sugar responses compared to freshly cooked rice.
