Health benefits of eating barley

Barley is a cereal grain that belongs to the grass family Poaceae. It is one of the most consumed whole grains that is rich in fibre, B vitamins and minerals. Consuming barley therefore not only boosts your digestive health, but it also supports your immunity and nervous system. Furthermore, they're an excellent source of phytochemicals, chemicals found in plants, that help protect cells and DNA from damage that may lead to cancer and reduce inflammation in the body.

That said, to reap all these benefits of this cereal plant, here are some barley recipes to try in the morning.

Barley khichdi

Rinse dal and barley and soak in water. Heat ghee in a pressure cooker. Add asafetida and cumin seeds and let them crackle for 4-5 seconds. Add some green chilies. Add onions and mix until it turns light brown. Add the barley and dal to the pressure cooker along with 3 cups of water, salt, and turmeric powder. Stir and let it cook for 10 minutes on low heat or cook for 1 whistle on high heat. Let the pressure release, open the lid and garnish with coriander leaves. Serve hot.

Barley upma

Heat ghee or oil in a pressure cooker. Add mustard seeds and curry leaves and let it crackle. Then add chopped vegetables and stir. Now add broken barley and saute them all together for a few minutes. Pour in 1 cup of water and add some salt to taste. Cover the lid and cook for 2 to 3 whistles on medium flame. Once done, allow the pressure to release. Open the lid and check that there is no excess water. Add lemon juice and serve hot.

Barley porridge

Rinse and soak barley in water. In a saucepan, bring water to a boil. You can add a cinnamon stick to it. Next add the soaked barley and cook on medium heat for 30 to 40 minutes, until the barley is soft. Turn off the flame and add sugar and milk to taste. Stir until it's fully blended. Top it up with dried fruits and nuts. Serve hot.

Barley smoothie

Add barley flour, almond milk, and honey in the blender. You can add some fruits of your liking too. Blend everything together. Pour into the glass and top it up with some flax seeds.

Barley pancake

In a bowl, whisk together barley flour, salt, baking soda, baking powder, and sugar. In another bowl, whisk eggs until they become light. Add in some butter, while whisking. Now add the flour mixture and mix until the batter reaches its consistency.

Heat a pan or a griddle. Sprinkle some oil. Add some scoops of batter onto the griddle and cook until the edges of the pancake look slightly dry. Flip and let it cook on the other side. Drizzle some maple syrup and honey and serve.
