Putin’s Delhi dinner was more than food, it was winter wellness wrapped in hospitality
From the moment Putin landed, India rolled out the red carpet, but the real welcome was on the table. The state banquet at Rashtrapati Bhavan featured carefully curated regional dishes that celebrated India’s cultural and culinary diversity.
It’s immunity, comfort and care
With colder days, layers of warmth, and changing air, our bodies demand more than bland meals. Spices, like those in Indian cooking, help boost immunity. Warm dishes aid digestion and add comfort. Vegetables, lentils, fibre, they nourish.Hosting an international guest in Delhi winter? It’s smart to serve dishes that offer all that. The dinner becomes a subtle but powerful demonstration of India’s belief in food as healing, warmth, and hospitality.
A menu that reflects the season and the spirit
The all-vegetarian state dinner hosted for Vladimir Putin opened with Murungelai Chaaru, a delicately spiced broth made from moringa leaves and moong beans. And honestly, it’s the perfect winter starter. Moringa is loaded with vitamin C, iron and antioxidants, which help strengthen immunity and fight common cold and flu, something we all desperately need this season. Moong dal, being light and protein-rich, also keeps the gut happy and improves energy levels, making it a warm hug in a bowl.Next came a trio of appetisers that beautifully showcased Indian culinary richness with a healthy twist.
Gucchi Doon Chetin, the star of Kashmiri cuisine, features morel mushrooms stuffed with walnut chutney. Morels are rare and super nutritious, rich in vitamin D (great for bone health in winter when sun exposure drops) and antioxidants that improve immunity. Walnuts add omega-3 fats, keeping the brain sharp and boosting heart health.
Kaale Chane ke Shikampuri Kebabs, served with mint chutney and soft sheermal, brought plant protein power to the table. Black chickpeas are fab for winter because they’re warming, help maintain stable energy levels, and keep you full longer. Mint chutney added a refreshing kick and aids digestion, which is very welcome when feasting!
The third appetiser, pelmeni-inspired vegetable jhol momos, came floating in a soothing broth. Packed with vegetables like carrots, cabbage, and spinach, these momos offer a dose of winter-friendly vitamins A and K, improving skin health and boosting immunity.
For the main course, guests were served Zafrani Paneer Roll in saffron sauce, Palak Methi Mattar Saag, Tandoori Bharwan Aloo, Achaari Baingan, and Yellow Dal Tadka, paired with fragrant dry-fruit saffron pulao and a mix of breads like lachha paratha, missi roti and magaz naan.
Saffron, used in both the paneer and pulao, is prized in winter for its warming properties, mood-boosting effects and antioxidant richness. Paneer itself is a great protein and calcium source, perfect for stronger bones and muscles.
Palak Methi Mattar Saag is a true winter warrior: spinach boosts iron levels and combats fatigue, methi improves digestion and helps regulate blood sugar, and peas add fiber and plant protein.
Tandoori Bharwan Aloo provides sustained energy, while Achaari Baingan brings gut-friendly probiotics through pickling spices. And nothing beats a comforting dal tadka, packed with protein and folate to support immunity and repair.
The dry-fruit saffron pulao deserves its own applause, nuts like almonds, cashews and raisins supply healthy fats that help keep the body warm during colder months.
The dessert spread featured Badam ka Halwa and Kesar-Pista Kulfi, served along with fresh fruits. Almonds improve brain function and generate natural heat, while pistachios are great for heart health and immunity. Yes, these sweets may be indulgent, but winter metabolism handles them better, and joy is a nutrient too!
Traditional snacks like murukku and gur sandesh added cultural charm. Jaggery-based sweets like sandesh are fantastic in winter as jaggery helps detox the body, aids digestion, and warms the system naturally.
To sip, there were coolers like pomegranate, orange, carrot-ginger and beetroot juice, each bursting with vitamins, antioxidants and anti-inflammatory properties to guard against seasonal infections and improve blood circulation.
If food is diplomacy, this menu was a masterclass, delicious, thoughtful, and built to protect health during the winter chill.
