Cucumbers, often eaten in salads, are loved by one and all for their instant hydrating qualities and that mouthful crunch. Not only this, they are a storehouse of various essential nutrients and a treat for weight watchers. This green capsule-like veggie is rich in Vitamin C, magnesium, potassium, vitamin K and manganese. Well, zero fat and low calories in cucumbers make them a perfect snack for those mid day peckish feelings. Keeping that in mind, we have 3 superb cucumber recipes that’ll soothe your growling tummy without gaining inches. Let’s begin.

Cucumber and hung curd boats

Ingredients

  • 2 pc Cucumber
  • 1 bowl hung curd
  • 1 onion
  • 1 tomato
  • 3 tbsp sweet corns
  • 1 cup pomegranate pearls
  • 1 tsp Oregano
  • Pepper and salt to taste

Method

Peel the cucumbers and cut them in length from the middle.

Now scoop out the seeds of cucumber to make boat shells of them.

In a bowl, mix hung curd, diced onion and tomato, and steamed sweet corn.

Season the filling with salt, pepper and oregano. You may use any spices of your choice.

Using a spatula, combine all the ingredients together.

Now start filling this mix into the cucumber shells.

Garnish it with pomegranate pearls and enjoy your low calorie quick bite.

No-cook Cucumber noodles

Ingredients

  • 3 pc cucumbers
  • 1 tbsp Sesame oil
  • ½ tsp dry garlic powder
  • 1 tsp Chilli flakes
  • 1 tsp Sriracha sauce
  • 1 tsp White vinegar
  • 1 tsp Soy sauce
  • 1 tbsp Sesame seeds

Method

  1. Wash and peel the cucumbers.
  2. Using a spiral cutter or a peeler, make rings-like cucumber noodles.
  3. Drizzle them with sriracha sauce, vinegar, soy sauce and sesame oil.
  4. Sprinkle some dry garlic powder, chilli flakes and sesame seeds to give it a hot toasted flavour.
  5. Do not store it and consume fresh.

Fish and pesto cucumber bites

Ingredients

  • 2 cucumbers
  • 1 canned fish or fresh fish fillet
  • 4 tbsp pesto
  • 10 Basil leaves
  • Mozzarella cheese (Thinly sliced into cubes)
  • Cherry tomatoes (halved)
  • 4 tsp Sweet onion sauce
  • Black pepper and salt to taste
  • Olive oil to cook

Method

  1. Heat a pan, add a tsp of olive oil and sear the fish fillet.
  2. Sprinkle salt and pepper on the fish.
  3. Cut the fish into 1 inch squares and keep aside.
  4. Peel and cut cucumbers into 1 inch thick slices.
  5. Place a basil leaf on top of the cucumber slice
  6. Now top it up with a piece of fish fillet.
  7. Drop a tiny dollop of pesto on to the fish.
  8. Place a thinly cut mozzarella cheese slice on it.
  9. Top it with the halved cherry tomato and secure the bite by piercing a toothpick through it.
  10. Drizzle some sweet onion sauce on top and repeat the process with all the cucumber slices.
  11. Serve immediately.
