The sustainably-sourced fish is as fresh as it gets. The John Dory feels as if it jumped from the waters onto your plate. And in a country with rich grazing, an abundance of seasonal fruit and veg, wonderful milk and delectable meat, you’re not surprised when you can’t get enough of the smoked veal or the mountain lamb.
