It is the only pizzeria of renowned chef Gabrielle Bonci, as well as having been featured on multiple TV food programs. So, it is safe to say that if you don’t eat here while in Rome, you will be missing out. Located outside the city centre, this tiny and unassuming place packs loads of flavours into some of Rome’s finest pizza. It will be crowded, let us warn you, with both locals and tourists, as it’s just that good. You won’t find your typical heavy dough here and uninteresting ingredients. Instead Bonci is a dough nerd, making sure that it is both light and airy so it does not take away the flavours. The pizzas are gourmet, loaded with an array of toppings and plenty of gooey cheese. Plan on eating this pizza standing up, as inside there is nowhere to sit, it is truly a “to go” kind of place. Yes, the pizzas are square, yes they cut them with scissors, and yes this pizza may just be the best pizza you have ever had.
