Chef Jungha Choi at Tamra, the all day dining restaurant at Shangri-La’s - Eros Hotel, New Delhi makes sure his Japanese theatre is a sushi lover’s haven in the city. Passionate about sushi, he believes in doing everything on his own, right from cooking rice to marinating ingredients, chopping fish, meat and vegetables till the final rolling of the sushi. His signature sushi is the lip-smacking crispy shrimp tempura hand roll. Some of other specialties include the maguro (tuna), shake (salmon), unagi (eel), ika (cuttle fish), amaebi (sweet shrimp). Vegetarians can enjoy Jalapeno, pickle radish, alphanso mango roll, cream cheese with summer berry amongst others. Not just that, there is also the seared sushi such as aburi Nilgiri prepared with a flame torch for those who are weary of experimenting with raw/cold sushi. Read less
