Holi recipes that you need to try

Holi is around the corner and one can see the country painted in all hues of happiness and joy. While the celebration begins way ahead in different parts of the country and even continues for days after the festival, the main highlight of the festival includes Holika Dehan, playing watercolours and gulal and indulging in scrumptious food. Every state celebrates Holi with same fervour and charm, but the ‘Kurta phad Holi’ of Bihar is world famous for its euphoric fun. The main celebration here begins on the eve of Phagun Poornima when people burn bonfire that includes araad, dung cake, redi wood, grains from the fresh harvest and unwanted wood and leaves. This day is also called “Choti Holi”. Holika Dehan symbolizes the victory of truth over evil. The morning time of Holi in this state is dedicated to wet colours, while the evening is all about gulal and traditional delicacies. Pedukiya

Pedukiya, also popularly known as Gujiya in other parts of India is a sweet dumpling-like dessert which is also relished as a snack during Holi. Gujiya is very famous throughout the country and is specially prepared in Bihar and other states on the occasion of this festival. The outer covering of this dessert is prepared with maida and the stuffing is made of semolina, sweetened khoya and a lot of dried nuts.

Dahi Vada

Dahi Vada, also called Dahi Bara is the undisputed king of all the food items served during Holi. The festival of colours remains incomplete without this savoury yet subtly spicy dish. This dish is basically prepared with urad dal paste, shaped and deep fried in form of dumplings and then dipped in sweet curd. The final dish is topped with a variety of sauces and spices.

Kathal ki Sabzi also known as Jackfruit Curry is a flavourful main course dish that is served with malpua, kachori and even poori on Holi.

Shakkar pare is a sweet and crispy textured snack. This snack basically replaces biscuits on Holi. These munchies are served on the evening of Abir gulal and are made with wheat flour sprinkled with sugar icing.

While Malpua is an exotic version of the dish called ‘Pua’, the desi version of it can be seen in the state of Bihar and is called ‘Kele ka Pua’. As the name suggests, it has a lot of mashed bananas and is especially loved by kids.

Made with soaked tamarind, sugar/jaggery and mild spices, this dip is used as a topping for dishes like Dahi Vada, Papdi Chaat and some people of the region relish it with Moong Dal Kachori as well.
