Gobi or cauliflower is a winter delight. This cruciferous vegetable is known for its crunch and cream texture added to curry-based dishes. From paratha to soup and stir-fry to curry, this cruciferous vegetable is enjoyed in many forms. As an excellent source of dietary fiber, it helps support smooth digestion, prevents constipation, and promotes the growth of healthy gut bacteria. It also helps in regulating blood sugar levels, keeping you fuller for longer, and supporting weight management. This vegetable is not just enjoyed in India but abroad too. As per the latest rating list released by Taste Atlas, out of 29 Best Rated Dishes with Cauliflower five are desi Indian dishes, enjoyed in many households. As per the report, on position one it's Ciorbă de văcuţă of Romania, a tangy and comforting meat soup that also uses a variety of vegetables such as celery stalks, onions, carrots, potatoes, bell peppers, cauliflower, or zucchinis, as well as seasonings, tomato paste, lemon juice, and (optionally) beaten eggs. And in 29th position, they have Risotto al cavolfiore of Italy, a traditional risotto variety made with cauliflower as the key ingredient. Other ingredients include risotto rice such as carnaroli or arborio, chicken or vegetable stock, white wine, garlic, parsley, butter, olive oil, salt, pepper, and grated cheese. It is a traditional dish with origins in Northern India and is made with potatoes, cauliflower, onions, and a variety of spices, which are all slowly simmered and usually served with rice, bread, chutneys, or a cucumber salad. Since no liquid is added to the dish (although extremely small amounts of it may be added), aloo gobi is reliant on the spices, including turmeric, garlic, ginger, cumin, coriander, and red pepper, the website reads.

It is a traditional Indo-Chinese dish consisting of fried cauliflower (gobi) that’s tossed in a sweet and spicy sauce (manchurian) The dry version is often served as an appetizer or a bar snack with ketchup on the side as a dipping sauce, while the gravy version features a thick sauce made with cornstarch and it’s usually served as a main dish with rice on the side, either fried or steamed. The batter is made with water, flour, corn flour, red chili powder, and seasonings.

It is a deep-fried dish made with gobi florets, besan, water, oil, and a blend of spices like turmeric, red chilli powder, and carom seeds. It is suggested to blanch the florets first before adding them in the pakoda batter, this helps reduce the risk of consuming bacteria and pakodas also absorb less oil and makes for a crunchy treat.

It is a stuffed flatbread, made with spiced cauliflower, flour, water, salt, and oil. The stuffing is typically made with a combination of cauliflower, ginger, turmeric, red chili powder, coriander, cumin, garam masala powder, dry mango powder, and salt. To make this dish, one can either add the stuffing raw or one can also saute them in a tempering of oil, cumin, and green chillies and then add to the dough. The dish is best served with pickles and curd.

It is a traditional North Indian dish, made with cauliflower, peas, turmeric, onions, ginger-garlic paste, oil, lemon juice, coriander, and red chili powder. . The dish is typically accompanied by rice, roti, or parathas on the side.
