Silky, coffee-infused panna cotta is the kind of dessert that makes people assume you’ve been leafing through pastry cookbooks. Warm 2 cups of cream with ¼ cup sugar until the sugar dissolves, stir in a strong espresso shot, then blend in 2 tsp gelatin that’s been bloomed in warm water.
