What is Sattu?


Sattu is basically made by roasting and grinding Bengal gram into a fine, smooth powder, which has a nutty flavor and is satiating as well as low in calories, which makes it perfect for the summer weather.Naturally loaded with protein, dietary fiber, calcium, iron, and magnesium, sattu is one of the most healthy and nourishing foods that are great for summers. Apart from that, the high protein content in sattu supports muscle repair and growth, while its dietary fiber helps in improving digestion and provides satiety, and further helps in effective sugar management as well as weight loss. Moreover, its low glycemic index helps regulate blood sugar levels, making it suitable for diabetics. Sattu also contains good amounts of iron, which prevents anemia, and magnesium, which supports heart health. Its cooling properties and easy digestibility make it particularly ideal for summers, keeping the body hydrated and energized.

Litti Chokha


A classic dish from Bihar and Jharkhand, the dish is a perfect melange of ghee-dunked littis served with chokha, pickles and bharta. Made by stuffing the dough balls with spiced sattu and spices, these dough balls are then roasted over a coal or flame or baked. The smoky flavor of litties is mindfully served with vegetable chokha, which is made by mashing vegetables and topping them with a tempering of spices and herbs to add more flavors to this meal.

Unlike the typical oily kachoris, this version is stuffed with a spiced sattu mixture and lightly fried to perfection. It’s best enjoyed with tamarind chutney or a side of curd, offering a balance of flavors and cooling effects. To prepare them, mix crumbled paneer, sattu, finely chopped onions, green chilies, coriander leaves, ginger, and a blend of spices like cumin, garam masala, and salt. Add a bit of water to bind the mixture, then shape it into small cutlets. Lightly coat each cutlet with breadcrumbs for extra crispiness. Shallow-fry them in a pan with minimal oil until golden brown on both sides.
