Veg fried rice

A classic that travels well: soft grains studded with tiny carrot, capsicum and sweet corn morsels. To make it, take 1 cup cooked rice (cooled), ½ cup mixed finely diced vegetables, a spoon of oil, a pinch of salt, and a dash of soy sauce (or a pinch of rock salt for the friendly version). Sauté cumin and carrot, add tomato puree and simmer till it thickens, fold in rice and steam briefly. Mild, slightly sweet tomatoes mean it works well with cubes of cucumber or a small boondi raita.
