Roasted Chicken recipe for Christmas

Christmas calls for a grand celebration as it is a significant festival celebrated by a large number of people worldwide. Christmas is not just a one-day festival but in fact, people start preparing for it as early as December first week. From baking festival-special dishes and cakes to decorating houses and putting up Christmas trees, this happy festival puts everyone in a jovial mood. Christmas parties with friends and family are also the highlight of this festival. If you too are planning to host a Christmas party this time, then don’t about what all should be on the menu. ​Prepare the marinade

In a bowl, add 2 tbsp olive oil, 1 tsp black pepper powder, 1 tbsp sage, 1 tbsp all-spice powder, 1 pinch nutmeg powder, 1 tbsp soya sauce, 2 tbsp barbeque sauce and salt as per taste. To make the all-spice powder, crush cinnamon, cardamom and clove together. Mix everything well to prepare a thick mixture. Lastly, add 3-4 tbsp orange juice and give a mix. Your marinade is now ready.

​Chicken dressing

Take a clean whole chicken, clean it properly and pat it dry. Now take ½ cup butter at room temperature, add ½ tsp black pepper powder, 1 tbsp chopped parsley, 1 tbsp garlic paste and some salt. Mix well to prepare a creamy butter mixture.

Stuff half of this mixture inside the skin of the chicken properly. Massage the chicken with the leftover mixture and coat it properly with it.

For the second round of marination, take the barbeque marinade that we prepared and rub it on the chicken. Also, chop one onion into 4-5 big pieces and chop 2 carrots into long slices. Coat them in the leftover marinade as well.

​Baking the chicken

Place the marinated chicken on a greased baking tray. Place the coated onion and carrots on the sides. Slide the tray into the oven and bake it at 220 degrees for about 15 minutes. Now reduce the temperature to 180 degrees and bake again for 20-30 minutes. Once the chicken develops a golden-brown coating on top, take it out from the oven.

​Sauce preparation

To make the sauce, add 1 cup red wine to a pan along with 4 tbsp orange juice. Bring it to a boil and add 1 tbsp frozen butter to it. Switch off the flame and mix well. Adding butter gives a creamy texture to the red wine sauce.

​Plating the final dish

Chop the cooked chicken into 4-5 large pieces and place it on a plate. Add the roasted veggies on the side. Drizzle the sauce on the dish and serve after garnishing with some fresh parsley.
