The history of pasta dates back to the 1st Century BC as it was believed that pasta based meals were a quintessential part of the ancient Roman culinary tradition, which slowly became a part of Sicilian cuisine and Italian culinary culture. Most pasta based meals like Lasagna, Spaghetti, Pizza evolved in the bylanes of Italy, but the popularity of pasta meals in Sicilain cuisine was one of the major reasons that made the love of pasta go beyond the geographical boundaries.

The Arab Influence

According to the scholars, the origin of pasta can be traced back to the eastern Mediterranean countries like Greece and other regions of the Middle East and Arabian Peninsula. However, the taste and texture of the pasta meals varied from region to region. A few culinary experts believe that the origin of Italian pasta meals came from Arab and Mediterranean region as it was very similar to a dish called ‘Itriyya’ that was described as ‘Dry Pasta’ by the Greeks.

This dish was popularised by Arab traders who travelled the world and scholars believed that this delicacy was prepared in such a way that it satiated their hunger as well as nutritional requirements. Back in the 7th Century AD, when Arabs occupied Sicily, the influence of Itriyya was seen on the culinary culture of Europe, which further evolved the pasta based delicacies.

Some historians also believed the rumours that Marco Polo introduced Chinese recipe of pasta to Italy, but studies show that his travels and expeditions happened more than 500 years later.

The influence of Arabs happened after their forces retreated from Sicily, leaving behind their unique ways of making pasta based meals nutritious, the lower class in Sicily tried their hands at the recipes and gave them a delightful twist, the taste and texture of these meals gradually propagated to the higher classes of Sicily and gradually left an influence on the Sicilian cuisine.

The culinary records of Sicilian cuisine mentions that by the 12th Century AD, Spaghetti pasta gained so much prominence in Sicilain and Italian culture that the production of this pasta staple began on an extensive level. However, the popularity of Spaghetti had a long way to go and it further evolved in the 18th Century AD, where in the addition of sauce and toppings gave this age-old delicacy a modern twist!

By the 18th century, Spaghetti pasta and other Italian delights became a quintessential part of European cuisine. Interestingly, the major influence of pasta reaching global palates happened during the mid 20th Century after the bakers and immigrants from Sicily went to the United States of America. The mass arrival of immigrants from parts of Italy brought in an influx of their culinary culture by starting bakeries and offering their staples in the classic style. Some of the most loved delicacies were Spaghetti pasta, Sicilain pizzas, Lasagna and other pasta based dishes.

This soon became a trend that mesmerized everyone from food connoisseurs to Hollywood stars. The increasing popularity led to massive production as well as propagation of this dish and now it is pleasing palates all around the world!
