5 sweets that are a must have on Lohri

The vibrant festival of Punjab, Lohri is marked with the bonfire, folk songs, and yummy food. It ends with the last phase of winter, harvest season, and unites families in love, laughter, and traditional goodies. Gajak

Gajak is one of the traditional sweets which are enjoyed during Lohri. The sweet consists of sesame seeds and jaggery which are crunchy and nutty. To make gajak, first take some sesame seeds, roast them till they get an aromatic smell. Meanwhile, take jaggery in a pan and dissolve it with little water. Stir well till jaggery melts completely and makes smooth syrup. Mix with roasted sesame seeds and spread this mixture in thin layers on greased surface, letting it cool and harden and then breaking into pieces. These are a powerhouse of iron, filling warmth during winter chill.

Til Ladoo

Other must-haves on Lohri are sesaame ladoo. Again these bite-sized sweet treats require just a couple of minutes preparation, yet it's a real health pack. Roast sesame seeds and dry grind them for coarse texture. Heat jaggery in another pan, till it lumps together in the form of a thick syrup. Mix that syrup with sesame seeds and when they cool, press them into shape to make balls. The til laddoos not only taste heavenly but at the same time are a great energizer during the festivity.

Pinni

Pinni is a healthy Punjabi sweet prepared with wheat flour mixed with ghee, jaggery and dry fruits. To prepare pinni, heat ghee in a pan and roast wheat flour to golden brown and fragrant state. Add powdered jaggery and a mix of crushed nuts like almonds, cashews, and pistachios. Stir until the mixture holds shape. Let it cool slightly, then shape into round balls. Pinni is a nutrient-rich snack that keeps you warm and energized through the winters.

Gur ki Rewari

Gur ki rewari is an ancient traditional sweet meal, made using jaggery and sesame seeds and made into small crunchy bites. For starters, let's dissolve the jaggery with a sprinkle of water in a heavy-bottomed pan. As soon as it reaches sticky consistency, mix well roasted sesame seeds with that. Pour it on the greased surface, and then take a small shape, when it gets warm. Gur ki rewari is a tasty treat to be shared with family and friends around the Lohri bonfire.

Meethe Chawal

This is one of the most popular sweet dishes prepared for Lohri in Punjab, with basmati rice, dry fruits and gur or jaggery. For this recipe, soak the rice for about 30 minutes. Then, dissolve gud or jaggery in hot water to liquidify it. Next, boil the rice until 80 per cent done and then strain the water. Now, take a kadhai and add liquid gud in it and add the boiled rice in it. Mix well and cook until the water evaporates. Then, add the finely chopped dry fruits in it and serve hot. You can also add a pinch of cardamom powder to the dish along with 1-2 tsp of saffron milk. This will increase the taste and flavour of Meethe Chawal.

Tips to have perfect Lohri sweets

1. Fresh Stuff: Make sure all the jaggery, sesame seeds and nuts are fresh for best flavor.
2. Getting right thickness: Right syrup consistency gives all the jaggery-based sweets the desired crunchiness.
3. Some personal touch Use cardamom or fennel seeds for flavoring, or mix some rose water with it.
