A handful of fresh coriander and mint leaves, one green chilli, a few curry leaves, and a clove of garlic (optional, but it adds a nice punch). Then come the essentials - roasted jeera powder, black salt, chaat masala, regular salt, and a squeeze of lemon juice. You’ll also need a little water and ice for blending.

In a blender, add the coriander, mint, green chilli, curry leaves, and garlic if you’re using it. Sprinkle over the jeera powder, black salt, chaat masala, and a pinch of regular salt. Squeeze in fresh lemon juice for that sharp, citrusy lift. Now toss in a few ice cubes and a splash of water, just enough to get things moving. Keep checking in between if the mix has blended well till it turns into a thick, aromatic paste that smells like summer. Pour this mix into an ice tray and freeze.
