Tips to make Rajasthani Mirchi Vada

Rajasthani Mirchi Vada is a classic and traditional snack enjoyed with chai during evening hours. Made with big green chillies filled with a stuffing of spiced potatoes, dipped in gram flour, and deep-fried to perfection, this is an indulgent snack that one can try at home. Ingredients

6–8 large green chilies, 1 cup boiled and mashed potatoes, 1 tsp mustard seeds, ½ tsp cumin seeds, ¼ tsp hing, 1 tsp grated ginger, 2 tbsp fresh coriander, ½ tsp turmeric powder, ½ tsp red chili powder, salt to taste, 1 tsp lemon juice, 1 cup gram flour, 2 tbsp rice flour, ½ tsp turmeric powder, ½ tsp red chili powder, a pinch of baking soda, salt to taste, water, ad oil for frying.

Wash and dry the green chilies and make a slit along their length and remove the seeds. Set them aside.

Heat some oil in a pan and add mustard seeds, cumin seeds, and hing. Let them crackle.

Add grated ginger and mashed potatoes, turmeric, red chili powder, salt, and coriander. Cook for 3–4 minutes and top it with coriander leaves and lemon juice. Let it cool down.

Now, fill each chilli with the potato mixture, pressing gently and let them rest for 10-15 minutes.

In the meantime, combine gram flour, rice flour, turmeric, red chili powder, salt, and baking soda in a mixing bowl. Add water to make a batter of coating consistency.

Also, heat oil in a deep frying pan or kadhai over medium heat.

Now, dip the mirchis in the batter and drop in the oil and deep fry until golden and crisp.

Serve hot with green and red chutney and masala chai on the side.
