This is one of the most famous tricolour dishes and to make it, make idli batter with soaked rice and lentil, divide them into three, add carrot puree to one, spinach puree to other and keep the third white. Layer them in the mould and then steam to perfection. Enjoy with sambar and coconut chutney.
