Easy Carrot Cake Recipe


It's the season for sweet and tender carrots. Whether you pick red or orange, they offer juicy pulp in every bite and make for a perfect choice for dishes like halwa, cake, and muffin. Here we have got an easy Carrot Cake that one can make in a kadhai too. Scroll down to read the recipe.

Ingredients


1½ cups all-purpose flour, 1 tsp baking powder, ½ tsp baking soda, 1 tsp cinnamon powder, ¼ tsp nutmeg powder, a pinch of salt, ¾ cup powdered sugar, ½ cup vegetable oil, 2 eggs, 1 tsp vanilla essence, 1½ cups grated carrot, 1/4 cup chopped walnuts, and 1 cup salt

Step 1


Add salt to a kadhai and heat it with a lid on a low flame for 10 minutes. Grease and line a cake tin as well.

Sieve flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a deep mixing bowl.

In another bowl, beat sugar and oil and also crack eggs and add vanilla essence. Mix well.

Add dry ingredients into wet ingredients gently and combine the mixture using cut and fold technique.

Now, add grated carrot and nuts and mix lightly. Transfer the cake batter to a greased cake tin and tape twice.

Place a mini stand at the centre of kadhai and place the cake tin on it. Cover and bake for 35–40 minutes or until a skewer comes out clean.

Once done, allow the cake to cool down, cut and serve with chai or coffee. Enjoy!
