Sauté mushrooms, onions, and garlic until golden brown. Add Arborio rice and stir until coated with the oil. Gradually add vegetable broth, stirring constantly until the rice absorbs the liquid. Stir in fresh spinach leaves and grated Parmesan cheese until the risotto is creamy and the spinach wilts. Season with salt, pepper, and a squeeze of lemon juice for a burst of freshness.
Vegetable Biryani

Preparation:
Sauté onions, ginger, and garlic in a pan until golden. Add a blend of whole spices such as cinnamon, cloves, cardamom, and bay leaves.
