Housed in the spacious foyer of Oslo's Opera House – a masterpiece of modern architecture - Brasserie Sanguine serves contemporary takes on classic Northern European dishes. The focus is on seasonal specials, which could include pan-fried salmon with beetroot and root vegetable cream or pork filet with green beans and Jerusalem artichoke. The food alone would make Sanguine worth a visit, but it's the spectacular views across the Oslo Fjord that really draw the crowds - and ensure they overlook the occasionally slow service.
