The menu offers about 30 different varieties of oysters which are flown in fresh from all around the planet (from Tasmania to New Zealand and Oregon to Vietnam), and range from mild to pungent in flavour. You could take the help of the wait staff while ordering, or alternatively just tick the ones that sound interesting off their list (like at a dim sum restaurant), and pair your food with a wine from their extensive bar (Oyster and Wine bar stocks one of the largest collections of wine on the island). To top it off, the restaurant’s vantage position means you’ll have the best views of Victoria Harbour and the stunning Hong Kong skyline while you eat. We recommend making it there for the Sunday brunch buffet, which is the best way to sample everything at a discounted price.
