
If you are a vegetarian and looking for a fiber-rich wholesome kebab preparation, then give this Beetroot, Sweet Potato & Walnut Kebab a try. Made with boiled and mashed beetroot, sweet potato and crushed walnuts, this gives the perfect crunchiness and at the same time melt-in-the-mouth comfort that can be enjoyed with paratha as a meal. 1 medium beetroot, 1 medium sweet potato, ½ cup walnuts, 1 small onion, 2 tbsp breadcrumbs, 1 green chilli, 1 tsp ginger-garlic paste, 1 tsp cumin powder, ½ tsp coriander powder, ½ tsp red chilli powder, ½ tsp garam masala, ½ tsp chaat masala, salt to taste, 1 tbsp fresh coriander leaves, 1 tbsp lemon juice, and oil for shallow frying

Wash and pressure cook beetroot and sweet potato for 2 whistles.

Once they cool down, remove the peel and mash them well in a mixing bowl.

To this, add finely crushed walntus and chopped onion, breadcrumbs, ginger-garlic paste, spices, salt, coriander, and lemon juice. Mix well.

Shape the mixture into kebabs and let them rest for 2-4 minutes.

In the meantime, heat a pan with little oil and then place the kebabs.

Cook the kebabs on medium heat until golden and crisp on both sides.

Serve hot with ketchup or chutney. One can also serve it with ulte tawe ka paratha for a wholesome meal.
