Easy South Indian Curd Rice for lunch

The summer afternoons call her healthy and cooling meals. Meals that are easy-to-make and at the same time comforting for the gut health and can easily be digested. Step 1


Whisk the curd in a deep bowl and keep it aside.

Ingredients


1 cup leftover rice, 1 cup curd, 1 tbsp oil, 1 tbsp mustard seeds, 1 sprig curry leaves, 2 tbsp roasted peanuts, salt to taste, 1 dried red chilli, 1/2 tsp black pepper, 2 tbsp pomegranate seeds, and 1/2 cup cucumber

Now, add the rice to it and mix it well along with salt and pepper.

Heat a mini pan, add oil and mustard seeds and let them crackle.

Add curry leaves, chili and let them crackle too.

Add the tempering to rice and curd mixture along with peanuts, cucumber, and pomegranate seeds.
